Homemade Any-Nut Butter

We’d love to share with you the recipe to make the above Mixed Nut Butter. Or Any Nut Butter. Or, for that matter, just “plain” Peanut Butter.

But there isn’t a recipe.

It’s just that simple.

All you need are some nuts and a bit of some type of oil — canola or peanut or even olive oil. Maybe some salt.

And you need a good food processor, or a good blender. Not a cheap one of either, but it doesn’t have to be a professional quality.

Here’s what you do: put the nuts (any nuts, in any combination, not too many of them, just a cup or so) in the food processor and turn it on. It’s going to pulverize the nuts, and then pulverize them some more, until it starts to get down to the oil that’s already in the nuts. (If you want crunchy nut butter, you can take a couple spoonfuls out now, to add back in later.)

At this point, you can scrape everything back to the bottom of the bowl, and you can keep doing this over and over, and eventually you’ll get some nut butter.

Or, you can add a little bit of oil, just a bit, and hit that button again. Scrape, maybe a bit more oil, process. Now, it’s going to start grabbing that nut puree and really liquefying it.

At this point, you it might be just the texture you want, or you can process it longer to smooth it out. (You’re not going to get it super-creamy like store-bought, but that’s not why you’re doing this, right?) And if you want crunchy, you can take those ground nuts you took out early on and stir them back in. If you want to add salt, add a bit. Or not.

(If you want to go really crazy, you can add some chile sauce, or some cocoa nibs, or chai or flax seeds, or whatever. It’s yours to use as you please.)

It’s just that simple. Put it in an airtight container and put it in the fridge, stir it up as you need.

No recipe needed.
